Today algae is used by humans in many ways; for example, as fertilizers, soil conditioners and livestock feed. Agar, a gelatinous substance derived from red algae, has a number of commercial uses. Algae is the national food of many nations: China consumes more than 70 species, including fat choy, a cyanobacterium which is considered a vegetable. Carrageenan, from the red alga Chondrus crispus, is used as a stabiliser in milk products.
